For National Batik Day, Roso Restaurant at The Meru Sanur and Bali Beach Hotel, The Heritage Collection presents Ragam Rasa. The four-hands dinner explores Indonesian heritage through contemporary cooking and a distinctly local lens.
A Culinary Expression of Heritage
At its heart, Ragam Rasa connects two culinary perspectives and Indonesia’s rich regional traditions.
Chef Degan Septoadji joins Prima Udayana, Executive Sous Chef at The Meru Sanur and Bali Beach Hotel. Together, they shape a menu inspired by the flavours, ingredients, and stories found across the archipelago.
The theme, “From Local Roots to Global Recognition,” takes its cue from batik itself. Like batik, Indonesian cuisine carries stories of place, craftsmanship, and cultural identity. Here, those traditions find a contemporary expression without losing their connection to their origins.

A Journey Through Indonesian Flavours
The menu begins with Scallop Naniura, pairing Lombok farm scallop tartare with turmeric and andaliman pepper. Next, Bebek Mebasa brings local duck terrine together with Balinese spices, rosella, and tamarind.
Among the evening’s highlights, Salmon Lodeh by Chef Degan reimagines a familiar Indonesian flavour profile. Slow-roasted salmon meets vegetables, tempeh, and coconut broth scented with galangal, green chilli, and lemongrass. From there, Bulung & Pakel Sorbet offers a refreshing pause with Serangan seaweed and Pakel mango. The savoury course then returns with Kondro, featuring US beef short ribs, kluwek, and peanut.
Finally, Kolak Pisang Ubi brings the dinner home with banana, sweet potato, pandan, and palm sugar.
Coconut ice cream adds a cool finish to this contemporary interpretation of a beloved Indonesian dessert.
