A Culinary Passage from Jakarta to Bali

The Westin Resort Nusa Dua, Bali reintroduces Travelogues of the Archipelago with a confident second season.
Building on its inaugural success, the series continues to map Indonesia’s diverse culinary heritage. Notably, it does so through collaborations with acclaimed restaurants and rising culinary talents nationwide.

To open the season, Ikan Restaurant & Bar stages a three-day culinary showcase. From 2 to 4 April 2026, it hosts TAMU Restaurant and OSMO Bar Jakarta, both under TOMA Group.
Consequently, the program brings Betawi cuisine from Jakarta into a coastal Bali setting. Guests experience a layered journey shaped by culture, craftsmanship, and narrative depth.

Betawi Flavors, Reinterpreted with Modern Craft

For the kitchen takeover, Arief Rachman presents signature Betawi specialties with deliberate precision.
He highlights Jakarta’s culinary identity through bold spices, comforting textures, and time-honored techniques.
Meanwhile, each dish moves fluidly between tradition and contemporary refinement. In parallel, Azzabella Putri leads the bar takeover from OSMO.

OSMO defines itself through inventive “Bastardized Classics” and a progressive mixology philosophy.
Therefore, cocktails draw from local flavors while embracing modern techniques and layered complexity.
Each creation complements the cuisine, offering a vibrant counterpoint to Betawi’s richness. Additionally, the experience extends through a collaborative à la carte menu. Mohamad Raviel and Arief Rachman jointly craft eighteen dishes. Nine creations from each chef present two distinct perspectives in thoughtful dialogue.

Season 2 continues this vision by inviting chefs and bars with strong identities to share their stories.
It allows guests to experience Indonesia’s culinary depth in a meaningful and memorable way.

Set against Ikan’s beachfront ambiance, the series unfolds as a sensory journey across regions and traditions.
Each course, therefore, becomes a passage through flavor, place, and cultural memory.
