The Westin Resort Nusa Dua, Bali continues its culinary journey across Indonesia with the second chapter of Travelogues of the Archipelago. On 21 and 22 August 2026, Ikan Restaurant & Bar welcomes acclaimed chef Fernando Sindu of Salira Jakarta.
This chapter turns the spotlight towards Minangkabau cuisine, celebrated for its fragrant spices, slow cooking and deeply rooted traditions. Rather than simply presenting regional dishes, the series explores Indonesia through the stories and flavours behind its food. Each chapter brings together chefs who reinterpret local culinary heritage while keeping its character and traditions close.
A Meeting of Two Culinary Perspectives
For this edition, Chef Fernando Sindu joins Chef Raviel Sidik, Head Chef of Ikan Restaurant & Bar. Together, they create an à la carte menu that brings West Sumatra’s bold flavours into Ikan’s coastal setting.
Chef Fernando, known as Nando, draws inspiration from years of culinary exploration across Indonesia and overseas. After graduating from the Culinary Institute of America and refining his craft in New York, he returned home to Indonesia. Today, he leads Salira Jakarta, The Union Group’s first restaurant devoted entirely to Indonesian cuisine.
His cooking explores the ingredients, traditions and stories that give each region its distinctive character.
Meanwhile, Chef Raviel brings his own perspective on Indonesian flavours and the coastal culinary identity of Ikan. Together, their approach creates a menu that feels rooted in tradition while remaining relevant to today’s diner.

A Minangkabau Table by the Sea
The resulting menu explores several distinctive Minangkabau preparations, including Kaleo Domba Muda and Ikan Bakar with Asam Padeh Sauce. The Rendang Series offers another expression of the cuisine’s depth, alongside Itiak Lado Mudo Bukittinggi and Udang Bakar Pariaman.
Set against Bali’s southern coastline, the experience offers a different way to discover West Sumatra.
The ocean views and relaxed beachfront atmosphere add a distinctly Balinese setting to this exploration of Minangkabau heritage. As a result, the experience feels less like a formal culinary showcase and more like a journey between two Indonesian landscapes.
